DESCRIPTION:Common Microbial Inhibitors in food and their impact on food safety and using matrix verification to ensure proper detection \nMicrobial inhibitors\, whether naturally occurring or intentionally added\, are of great importance to food safety. Many of these substances are known to either inhibit or inactivate microorganisms that would be detrimental to the quality or safety of the food product. However\, they can pose a challenge for the analytical microbiology laboratory as they can inhibit detection or quantification of the target microorganism. Our experts will discuss various inhibitory components in food that we commonly encounter at NQAC Dublin\, as well as how we determine the appropriate enrichment media or dilutions to ensure proper detection of the target organisms. \nKey Takeaways: \n• Identify common microbial inhibitors present in ingredients and food products \n• Understand the effect of these inhibitors on microorganisms \n• Learn how the laboratory determines the proper enrichment media or enrichment dilutions to ensure optimal detection or quantification of the target organism \nRegistration is closed. \n\nPresented by Nestle Quality Assurance Center (NQAC) Dublin: \nGabriel Sanglay is a Senior Microbiologist at the Nestle Quality Assurance Center and is a member of the Biochemistry & Special Investigations team (formerly known as Technical Services). His specialties include method validation/verification\, experimental design\, new method implementation\, cultural and molecular detection of pathogens\, and matrix verifications. Gabe obtained his Ph.D. in Food Science & Technology from The Ohio State University. He has been with NQAC Dublin for 7 years\, and has over 12 years of experience working in the academic and government sectors. \nJeremy Hoover is a microbiologist and supervisor of one of the sample processing teams at NQAC Dublin. He received his undergraduate degree from The Ohio State University in Microbiology and has worked at NQAC for 8 years with experience with both qualitative and quantitative testing. He assists in leading the matrix verification team to ensure quality results for routine testing. Over the years\, Jeremy has helped to implement new methods\, maintain control charts and led the instrument management team.
